Actress Marcia Gay Harden doesn't eat any processed sugar as a way to protect her brain against Alzheimer's. Instead, she swaps sugar for more natural sweetening options like dates. This pie is her favorite dessert recipe because she can indulge guilt-free!

Ingredients

  • 1 cup walnut halves and pieces
  • 3/4 cup soft, pitted dates
  • 1 tsp ground cinnamon
  • pinch of sea salt
  • 1 cup coconut cream
  • 3 oz dark chocolate, melted
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract

Directions

1. To make the crust, purée 1/4 cup of dates with cinnamon, walnuts, and salt until finely ground. Clean out the food processor. 

 

2. Press the crust firmly into a glass pie dish (including halfway up the side). 

 

3. Heat the coconut cream slightly in a saucepan over medium heat. 

 

4. Put the heated coconut cream, 1/2 cup dates, chocolate, coconut oil, and vanilla extract in the food processor and pulse until the filling is dark and smooth. 

 

5. Pour the filling in the pie dish and chill to set. 

 

6. Once chilled, serve topped with whipped coconut cream -- enjoy! 

 

**Note: Calorie count doesn't include whipped coconut cream topping.
