Peach, Cucumber, and Avocado Salad

Get a little taste of summer all year long with this fresh and colorful salad. Packed with vitamins, this recipe is perfect for a quick lunch or as an appetizer to impress guests. 

1 medium English cucumber, sliced into 1/2 inch rounds
1 avocado, peeled, pitted and diced
2 ripe peaches cut into 1 inch pieces
1 cup blueberries
1 vidalia onion, halved and thinly sliced
1/3 cup rice vinegar
1/2 tsp salt or more to taste
1 tbsp grape seed oil

1. Assemble all ingredients in a large bowl. Sprinkle with the vinegar, salt, and oil and gently mix until well-combined.
