Makes 1 sandwich
- 2 tbsp peanut butter
- 2 full sheets of graham crackers
- 1/4 cup coconut ice cream
Spread 1 tablespoon of peanut butter on one side of each graham cracker. Scoop ice cream onto graham cracker and evenly spread along the cracker with a spoon. Top with remaining graham cracker, peanut butter side down. Place in the fridge to set for 20 to 30 minutes.
