1/2 lb pound parsnips, peeled and cut into large chunks 2 ripe pears, cored and cut into large chunks 4 cups chicken or vegetable broth 1 avocado, diced into large chunks 1 tbsp lemon juice pinch of salt parsley (for garnish)
1.Bring the parsnip and broth to a boil in a medium or large soup pot.
2. Add in the pears and bring back to a boil.
3. Once boiling, lower heat and simmer for about 10 minutes (until parsnips are soft).
4. Carefully transfer the soup into a blender – do it in batches, if necessary. Add in the avocado and the salt and blend until smooth and creamy.
5. Serve hot or cold, topped with chopped parsley.
