This stuffed peppers recipe is Pegan 365-approved! If you've already made this four-bean chili recipe, just stuff your peppers with it and warm it up for a few minutes. You'll have a healthy and filling meal completed in no time.
- 4-5 cups chili
- 4 peppers
- dash of cilantro
- 1/2 lime, sliced
1. Fill each pepper with about 1 cup of chili ( depending on size of pepper).
2. Arrange the peppers upright in a baking dish, add a little water to the bottom of the dish, cover with foil and bake for 20 minutes.
3. Remove the foil and bake for another 5- 6 minutes.
4. Sprinkle with cilantro and add a slice of lime
