Pepita Gazpacho

Celebrate the summer's tomato season with this delicious gazpacho. Serve this chilled in a tall glass and sprinkle with roasted pumpkin seeds to impress your guests. 

1 clove garlic, chopped
1/4 cup roasted pumpkin seeds, plus more for garnish
1 tsp salt
2 tbsp olive oil
2 tbsp white wine vinegar
4-5 ripe tomatoes (about 2 pounds) roughly chopped
1 medium English cucumber, roughly chopped
small vidalia onion, chopped
1 light green, long Italian pepper chopped
Austrian roasted pumpkin seed oil for garnish

Place all ingredients in a blender and process until smooth.

Yield 4 cups.
