Pork Tenderloin Sweet Potato Hash

Switch up your breakfast with this dish. Pork tenderloin is a very lean meat and is full of vitamin B, which will help you turn your breakfast into energy. Pork is also a good source of protein, which will fuel your body. This breakfast is an energy-making machine!

2 tbsp grape seed oil
2 cups shredded sweet potato (about 1 medium-size potato)
1 1/2 cups diced onions
1 cup diced red or green pepper
5 oz pork tenderloin, diced
1 clove of garlic, finely chopped
1/2 tsp salt
freshly ground pepper
pinch cayenne
1 tsp chopped fresh rosemary

1. In a large skillet heat up the oil. Cook the sweet potatoes and onions on medium to high heat, stirring occasionally until they start to soften, about 3 minutes.

 

2. Stir in the peppers, pork, and garlic. Season with salt, pepper, cayenne, and rosemary. Cook stirring occasionally for about 3 minutes or until pork is almost cooked through.

 

3. Lower the heat to medium or low and continue cooking for a few more minutes, until you have formed a bit of a crust on the bottom of the pan and the pork is just cooked through.

 

4. Serve topped with poached or fried eggs.
