Post Raisin Bran Flake Muffin

The cereal base provides a good source of iron.

1 1/2 flour
2/3 cup firmly packed brown sugar
1 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1 egg
1 1/2 cups fat-free milk
2 tbsp oil
3 cups Post Bran Flakes
1/3 cup raisins

Mix flour, sugar, baking soda, cinnamon and salt in large bowl. Beat egg in small bowl; stir in milk and oil. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal and raisins.

Spoon batter into muffin pan which has been sprayed with cooking spray, filling each cup 2/3 full. Bake at 400°F for 20 to 25 minutes or until lightly browned. Serve warm.
