Craving a filling salad packed with flavor? This quinoa bowl with chicken and cherries is loaded with protein, fiber, and all kinds of delicious, fresh ingredients. Use rotisserie chicken to save time and prepare to be amazed! 


  • 1 cup quinoa, rinsed
  • 3 cups whole rotisserie chicken breast, meat shredded, skin removed
  • 1 1/4 cups sweet cherries, pitted and halved
  • 2 cups watercress
  • 1/3 cup goat cheese, crumbled
  • 1/4 cup almonds, sliced
  • 3 scallions, thinly sliced
  • 1/3 cup mint, chopped
  • 1/2 tsp coarse salt
  • 2 tbsp lemon juice
  • 6 tbsp extra-virgin olive oil
  • 1 pinch pepper


1. Cook quinoa according to package instructions. Let cool. 


2. Combine quinoa, chicken, cherries, watercress, goat cheese, almonds, scallions, mint, and salt.


3. Whisk lemon juice with oil. Gently toss with quinoa mixture. Season with pepper to taste.
