2 hard-boiled eggs
1 tbsp diced carrot
1 tbsp diced cucumber
1 tbsp diced green onion
1 tbsp diced tomato

1. Cut hard-boiled eggs in half lengthwise.

 

2. Remove the yolks to a small bowl.

 

3. Add finely diced carrot, cucumber, green onion, and tomato (about 1 tablespoon of each).

 

4. Break up the yolk and combine with the veggies.

 

5. Fill each half of the hard-boiled eggs with the vegetables.
