Rev Run's Crispy Baked Chicken

This crispy baked chicken provides the same taste of fried chicken without the unhealthy ingredients. This recipe is diabetic-friendly and great for the whole family. Rev Run says the trick is to coat the chicken in eggs with crispy rice cereal and seasonings to create a fried chicken-like taste and texture.

4 (6 oz) boneless, skinless chicken breasts
2 cups crispy rice cereal
1/4 tsp garlic power
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp salt
1/2 tsp dried Italian seasoning
1 egg
2 tbsp water
Nonstick vegetable cooking spray
1 cup long grain brown rice, cooked according to directions without salt or fat

1. Preheat oven to 350°F.

 

2. Crush crispy rice cereal in a bowl and add garlic powder, onion powder, paprika, pepper, salt, and Italian seasoning. Mix well.

 

3. Whisk egg and water in a shallow bowl and coat chicken breast with egg mixture, then coat chicken in crushed cereal mixture.

 

4. Place on a baking sheet that has been sprayed with nonstick cooking spray.

 

5. Bake uncovered for 1 hour or until done.
