This delicious recipe packs a serious nutrient punch that's ready in a pinch when you have the munchies. The eggs are full of vitamins and healthy fats complemented by the avocados variety of healthy fats, nutrients, minerals and vitamins. The protein in the eggs and the fiber in avocado are a guilt-free way to keep you feeling full until your next meal.


  • 1 medium/large avocado
  • 2 small eggs
  • several leaves fresh basil


1. Preheat your oven to 450°F.


2. Cut avocado in half and carefully remove the pit from the center.


3. Crack one egg at a time into a bowl and slide each into the hole left by the pit in each half of avocado.


4. Place on tray and bake at 450°F for 10-12 minutes.


5. Garnish with some sliced basil and enjoy!
