Rocco DiSpirito's No-Bake Chocolate Chip Cookies

Safe-to-eat cookie dough is all the rage right now and this recipe is just as good. Even though the batter is molded into cookies, it's okay to eat with a spoon too. Get the taste of an indulgent cookie without the added sugar and fat!

1/4 cup unsweetened shredded coconut
1/4 cup almond meal/flour
2 tbsp unsweetened almond butter
1/2 tsp vanilla extract
2 tbsp stevia-sweetened chocolate chips
1 tbsp raw coconut nectar

1. In a medium bowl, combine the shredded coconut, almond meal, almond butter, vanilla, chocolate chips, and coconut nectar and mix well with your hands.

 

2. Form into 8 balls, then press into round disks with the palm of your hand.
