Rolled Veal Medaillons

Add this veal medallion recipe into your dinner party repertoire. Wrapped in bacon and sprinkled with mozzarella cheese, this dish is sure to impress. 

8 bacon strips
8 long strips zucchini
4 oz fresh tomatoes diced
1 large red onion, thinly sliced
2 cloves garlic, diced
1 tsp fresh ginger, chopped
4 oz mozzarella (cheese of your choice)
1 tsp cayenne pepper
2 tsp fresh oregano, chopped
16 oz veal medaillons
salt and pepper, to taste

1. Preheat oven to 275°F.

 

2. Season medaillons with salt and pepper. Wrap medaillons, first with the zucchini, then with the bacon strips. Secure with toothpicks.

 

3. In a medium to large pan, sauté wrapped medaillons, then add onions, garlic, ginger, oregano, and cayenne pepper into pan.

 

4. After about 3-5 minutes, add the tomatoes and place pan in oven for about 8 minutes.

 

5. Sprinkle the cheese on top of the medaillons and let melt in the oven for an additional minute. Serve with baked potatoes or steamed brown rice.
