Take a break from tossing chicken into your greens. Adding fish like salmon is an easy way to add more flavor, not to mention the extra health benefits in the vitamins and omega-3 fatty acids it brings to the table.
- 1 cup coarsely chopped canned salmon
- 1 cup diced cucumber
- 1 cup diced red onions
- 1 cup diced fennel bulb
- 3 tbsp apple cider vinegar
- 2 tbsp olive oil
In a large bowl, combine all ingredients and toss gently. Makes 4 cups.
