Sam Talbot’s Honey Crunch Granola With Blueberry, Coconut, and Lime

While still sweet in flavor, this granola is packed with natural sugars that are better for your body. Simply enjoy a small portion on top of protein-packed Greek yogurt or plain with a little bit of nut milk.

  • 3 cups uncooked regular rolled oats
  • 2/3 cup hulled pumpkin seeds (pepitas)
  • 2/3 cup dried unsweetened blueberries
  • 1/2 cup unsweetened dried coconut
  • 1/2 cup (about 2 oz) coconut flour
  • 1/3 cup white sesame seeds
  • 1 1/2 tsp sea salt
  • 1/2 cup coconut oil, at room temperature (solid)
  • 1/2 cup raw honey
  • 1 1/2 tbsp lime zest, plus 1/4 cup fresh juice (from about 2 limes)


1. Preheat oven to 325°F. Stir together the oats, pumpkin seeds, blueberries, dried coconut, coconut flour, sesame seeds, and salt in a large bowl. 


2. Melt the oil with the honey and lime juice in a small saucepan over medium-low, stirring often; bring to a simmer. Pour over the oat mixture, and stir until well combined and the oat mixture is fully coated. 


3. Spread the granola on two large rimmed baking sheets, and bake at 325°F on the upper third and lower third racks until golden brown, about 20 minutes, stirring once halfway through. Cool completely in the pans on wire racks, about one hour. Stir the lime zest into the cooled granola. 


**Note: This granola will last for two weeks in an airtight container at room temperature.
