- 4 egg whites
- 1 pinch salt and pepper
- 1 oz goat feta cheese
- 1 whole egg
- 1 small beefeater tomato, sliced
- 1 tbsp chopped fresh dill
Whisk the egg whites in a bowl and add salt and pepper. Stir the cheese into the egg mixture.
Spray non-stick olive oil spray in a small pan. Add the eggs, mix them in the pan with a wooden spatula until set.
Place two to three large tomatoes slices on a plate, pile the eggs on top of the tomatoes, sprinkle with dill and enjoy.
