Shiitake, Bok Choy and Pineapple Medley

This colorful Asian-inspired dish incorporates ingredients that are high in flavor and nutritional value. Pineapple packs a punch of vitamin C and livens up the taste of the dish with its sweet and tangy flavor. Bok choy is low in calories and high in vitamins, minerals and antioxidants.  


  • 1 tbsp olive oil
  • 1 cup sliced shiitake caps
  • 1 clove garlic (thinly sliced)
  • 2 cups chopped bok choy (1 1/2 inch pieces)
  • 1 cup pineapple chunks
  • 2 tsp low-sodium tamari or soy sauce
  • 1/4 cup torn cilantro leaves


Heat olive oil in a large skillet.

Add sliced shiitake mushroom caps and saute until they begin to brown, about 4 minutes.

Add garlic and cook, stirring until it becomes fragrant, about 30 seconds.

Add bok choy and cook for 3 minutes.

Add pineapple chunks and tamari or soy sauce and cook until everything is hot, about 2 minutes.

Add cilantro leaves before serving.

Makes 2 servings.
