1/2 cup brown rice, cooked Juice of 1 fresh lemon 1/2 bunch cilantro, finely chopped 2 salmon steaks 4 cloves fresh garlic paste 1 tbsp crushed red pepper 1/2 tsp cumin powder 1/4 tsp turmeric powder 2 tbsp avocado oil Salt, to taste Freshly ground black pepper, to taste
First, wash the fish steaks and marinate with garlic paste, red pepper, cumin, salt and turmeric for 15 minutes. Heat avocado oil in a non-stick pan on high and add the marinated fish to sauté for 2 minutes on both sides. Cover the pan with foil and bake in oven for 15-20 minutes.
Put the cooked brown rice in a bowl and toss with 1 teaspoon lemon juice and some salt and pepper to taste. Mix well and pour onto 2 plates equal amounts.
Place the baked salmons each on top of the brown rice and garnish with chopped cilantro.
