Spinach Frittata

olive oil for greasing
1/2 cup frozen spinach, thawed
3 eggs
1 pinch freshly grated nutmeg
1/4 tsp salt
2 tbsp milk
1/4 cup red peppers diced
1 tbsp ground chia seeds

Preheat oven to 375ºF.

Grease 6 regular or 12 mini muffin cups.

Squeeze spinach as dry as possible, then chop finely and set aside.

Whisk together the eggs, nutmeg, salt, milk, red peppers and chia seeds. Stir in the spinach and distribute evenly among the muffin cups.

Bake for 5 to 7 minutes for mini muffin size and 8 to 9 minutes for the regular size (until the eggs are set).
