14 oz chicken sausage 2 cups kale 2 garlic olives 1/2 cup onion 2 cups cannellini beans 1 tbsp olive oil 2 tbsp grated cheese 1 pinch of dried basil seasoning 1 pinch of cracked red pepper Salt and pepper to taste
In a pan, cook small pieces of sausage until lightly brown. In the same pan, sauté onions and garlic in olive oil until they are translucent. \r\n
\r\nPreheat the oven to 350°F. \r\n
\r\nIn a casserole dish, layer the cannellini beans with basil, cracked red pepper, one tablespoon of grated cheese, salt and pepper. Add the sausage, onion, garlic and broth from the other pan on top of the seasoned beans. Cover the pan with aluminum foil and bake in the preheated oven for 30 minutes. \r\n
\r\nIn the meantime, roughly chop the two cups of kale. Steam them until they are soft. Add one can of beans and the remaining cheese to the steamed kale. \r\n
\r\nAfter the casserole is done baking, add the mixture of kale, beans and cheese. Place back in the oven for 20 minutes and serve when ready!
