Super Seed Recipe: Pumpkin Granola

Makes 10 cups


  • 1/4 cup unsalted butter (1/2 stick)
  • 1/4 cup vegetable oil
  • 1/3 cup brown sugar
  • 4 cups rolled oats
  • 3/4 cup pumpkin seeds
  • 2 cups slivered almonds
  • 3/4 cup sunflower seeds
  • 1 tsp cinnamon
  • 2 cups combined dried fruit


Heat oven to 350°F.

In a small saucepan combine sugar, oil and butter until fully melted into a syrup.

Mix together oats, almonds, sunflower seeds, pumpkin seeds and cinnamon.

Coat the oat mixture with the sugar syrup, mixing well.

Cover a large, rimmed baking sheet with this oat and syrup mixture. Put the mixture into the oven for about 1 hour, flipping and stirring until golden and well-toasted.

Remove the granola from the oven and place in a large bowl. Mix in dried fruit.

Store in an airtight container.
