Sweet Pea and Mint Soup

You don’t need meat or heavy cream to make a thick protein-packed soup.  Peas are a fantastic source of protein, and have a nice creamy texture when mashed. When combined with mint, this soup has sweet hints of flavor. The mint also helps to promote digestion — perfect for when you are feeling sick.


  • 5 cups frozen sweet peas
  • 1/2 small sweet onion
  • 2 tbsp fresh ginger, minced
  • 1/4 cup fresh mint
  • 1 tbsp olive oil
  • water
  • salt and pepper


1. Heat the olive oil on a medium-low setting in a saucepan. Add diced onion and minced ginger and sautee until slightly brown and aromatic. Add the 3/4 of the frozen peas, stirring the peas into the pot for 1 minute. Add water until the peas are covered and cook over medium heat for 10 minutes.


2. Turn the heat off and let it cool.  Once it is cooled off, place in the blender. Add the fresh mint to the soup in the blender and puree. Add salt and pepper to taste.


3. Return the soup to the warm pan, add the remaining peas and make sure the heat remains off. The peas will defrost in warm soup. Serve cool or warm, and enjoy!
