Sweet Potato and Apple Cream Soup

Fiber-packed apples and nutrient-rich sweet potatoes make this soup a healthy lunch or dinner alternative. 

1 1/2 lbs sweet potatoes, peeled and diced
3 medium apples, peeled, diced
1 1/2 cups apple cider
1 tsp cinnamon
dried apple chips (optional)


Combine all ingredients in a large pot and bring to a boil.
Reduce to a simmer, cover the pot and cook on low until apples and sweet potatoes are soft, about 20 minutes.
Puree in a blender or with an immersion blender until smooth and creamy.
Serve topped with dried apple chips if you like.
