Swap out meat for sweet potatoes in your tacos for a vegetarian twist on this classic meal. Top with sauerkraut guacamole to add probiotics into your lunch or dinner.
- 1 tbsp grape seed oil
- 2 cups small diced sweet potatoes
- 1/2 tsp taco seasoning
- 1 cup cooked black beans
- 1 cup shredded lettuce
- 4 soft corn tortillas
- 4 tbsp cilantro leaves
1. In a large skillet, heat the oil and cook the sweet potatoes on medium heat until lightly browned and soft (about four to five minutes).
2. Sprinkle with the seasoning, stir in the beans, and cook two more minutes until heated through.
3. To assemble heat the tortillas in a dry pan. Once hot, top each with lettuce, sweet potato, bean mix, and sprinkle with the cilantro.
