

The creator of sweet potato toast, Kelsey Preciado, came up with the idea as a substitute for grains—which is what this tuna toast is too! Add homemade tuna salad on top of sweet potato slices for a healthier sandwich.

Ingredients
- 1 sweet potato
- 1 tbsp mayonnaise
- 1 tbsp relish
- 1 tbsp diced red onion
- 1 can tuna
Directions
1. Slice sweet potato lengthwise into 1/4-inch slices. Add to the toaster like you would bread and toast on high. You may have to toast it twice to fully cook it.
2. Mix together mayonnaise, relish, red onion, and tuna.
3. Top toast with tuna salad and enjoy!
