Thai-Style Chickpea Spinach Omelette

Ingredients

  • ½ cup roughly mashed cooked chick peas
  • 1 cup chickpea flour
  • 2 tsp lime zest
  • 2 tsp lime juice
  • 5 tsp Thai fish sauce
  • 1 ½ cups chicken broth or water
  • 1 or 2 tsp jalapeños
  • 2 eggs
  • 2 cups chopped baby spinach
  • grapeseed oil for cooking
  • cilantro and hot sauce for serving- optional

Directions

1. In a large bowl mix all ingredients until well combined.

 

2. Let batter rest for an hour.

 

3. In a hot skillet add a little oil, ladle about ¾ cups of the batter out, swirl the pan to distribute the batter and cook until nicely browned on the underside, about 2-3 minutes. Carefully flip the omelette and cook the underside for another minute or two.

 

4. Serve sprinkled with some cilantro and drizzle a little hot sauce over each omelette before serving.
