Todd’s Ginger Tuna Slider Smash

Celebrity chefs Todd English, Candice Kumai and Aaron Sanchez all created a healthy version of an American classic: the hamburger. Each one of these recipes includes a fat-burning trick to help you shed pounds without feeling deprived. Find out what each of these chefs did to make their burgers delicious and diet-friendly!


  • 1 lb fresh ahi tuna
  • 1 jalapeño, seeded and finely diced
  • 1 tbsp fresh chopped cilantro
  • 2 oz asian sweet chile sauce
  • 2 dashes Asian fish sauce
  • 2 fresh avocados
  • 1 oz fresh baby arugula
  • Extra virgin olive oil to taste
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 tbsp fresh ginger, peeled and finely diced
  • Sesame wheat cracker bread
  • 1/2 lemon


Hand chop the fresh tuna and place into a mixing bowl then store cold in the refrigerator. Add cilantro, jalapeño, sweet chile sauce, asian fish sauce and season with salt and pepper. Mix all ingredients together being careful not to mash too much, then form into 2 oz patties, you should get about 8 sliders.

Heat skillet or grill to moderate heat, sear tuna burgers to desired temperature. Place tuna patties onto sesame wheat crackers. Toss the arugula with extra virgin olive oil, lemon and season with salt and pepper, and top over tuna burgers and serve.
