Total Choice Jicama Lime Salad

This salad is every bit as refreshing as it is filling. Bite into the crisp jicama and citrus flavor of the lime and transport yourself back to summer. Get the complete Total Choice Plan here.


  • 1/2 cup lime juice
  • 1 tsp salt
  • pinch cayenne pepper
  • 2 lbs jicama, trimmed and cut into 1/4" x 2" strips
  • fresh parsley or cilantro, chopped (optional)


In a large mixing bowl, combine lime juice, salt and cayenne pepper and mix well.

Add jicama strips and toss until jicama is thoroughly coated.

Add optional parsley or cilantro and serve.
