If you are someone who doesn't love greens, this is a great way to get the nutrients they provide without all of the flavor you don't enjoy. So easy to prepare, yet so rich in flavor, this dish tastes like it took hours to make.   • 4 oz chicken
  • 1/2 cup fresh spinach
  • 3 tbsp grated parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp extra virgin olive oil
  • 1 oz pine nuts


In a small bowl, combine spinach, cheese, garlic, oil and pine nuts.

Cut a 2-inch pocket in the thickest part of the chicken breast.

Place mixture in pocket and bake at 350 F until chicken is no longer pink and stuffing is hot, about 20 to 25 minutes.
