Vanilla is usually thought of in terms of food as part of a dessert course. But when paired with the right foods it can actually be a flavor for a variety of different dishes. Try using this butter on top of your corn on the cob -- it may sound strange, but chef James Briscione swears by this flavor combination.

Ingredients

  • 1/2 lb (2 sticks) unsalted butter, softened
  • seeds scraped from 1/2 vanilla bean (save the pod for another use)
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp freshly ground coriander

Directions

1. Combine all the ingredients in a small bowl and mix until smooth and well blended.

 

2. Transfer to an airtight container and store in the refrigerator for up to four weeks, or in the freezer indefinitely.
