In lieu of anchovies and eggs, this vegan salad dressing from Terry Hope Romero's Protein Ninja uses unsalted cashews that are soaked in water and mixed with garlic, lemon juice, and olive oil for a creamy and tasty sauce.
- 1/2 cup unroasted cashews
- 3/4 cup hot water
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 4 cloves peeled garlic
- 1 tbsp shiro miso (white miso)
- 2 tsp Dijon mustard
1. Soak cashews in hot water until softened.
2. Combine all ingredients in a bowl and mix together with a fork.
