1 onion, diced 1 cup cooked brown rice 1 cup small diced tomatoes 1 cup cooked black beans juice of 1 lime 1 tsp chili powder 1 avocado, diced 1 cup coleslaw mix (undressed) 2 tbsp cilantro leaves 4 whole-wheat burrito wraps salsa (optional)
In a medium bowl gently mix together the onions, rice, tomatoes and black beans with the lime juice and chili powder. (If you don't particularly love raw onions for breakfast, sauté them before using.)\r\n
\r\nTop each wrap horizontally along the middle with a quarter of the mixture, followed by the avocado and slaw.\r\n
\r\nSprinkle each with 1/2 a tablespoon of cilantro leaves and tightly roll up "burrito style," tucking in the ends left and right, then rolling into a tight bundle bottom to top.\r\n
\r\nCut in half and serve with your favorite salsa.\r\n
