1 zucchini
1 garlic
1 onion
2 basil
1 tbsp extra virgin olive oil
1 cup tomato sauce
1 tbsp Parmesan cheese
Cut the zucchini into 4 quarters. Use a vegetable peeler to peel long, thin pasta-like strips of zucchini into a microwavable bowl. Add garlic, onion, basil leaves, tomato sauce, olive oil, salt and pepper to bowl. Stir all the ingredients with a large spoon and cook in the microwave for 2-3 minutes. Pour dish into pasta bowl, and add basil and Parmesan to taste.
