Warm Mixed Salad

Pouring the hot tomatoes, garlic and oil over fresh greens slightly wilts this salad, transforming it into a more flavorful and complex dish. 

8 cups mixed salad greens
2 pears, diced
1/4 cup olive oil
1 pint grape tomatoes
2 cloves garlic, thinly sliced
2 oz blue cheese, crumbled
1 tbsp maple syrup
1/4 cup white balsamic vinegar
salt and pepper to taste

 

In a large bowl mix together the greens and pears. Set aside.

In a large skillet, heat the olive oil, toss in the tomatoes and cook until quite soft – about 5 to 6 minutes. Stir in the garlic and cook another 30 seconds to 1 minute.

Pour the still hot, cooked tomatoes, garlic and oil over the mix. Drizzle the maple syrup and balsamic vinegar over the salad. Season with salt and pepper, toss and top with the blue cheese.

Makes 4 servings.
