Whole Cookie Recipe

  • 2 tbsp margarine
  • 2 tbsp canola oil
  • 1/3 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 1 egg white
  • 1 tsp vanilla
  • 2/3 cup whole wheat pastry flour
  • 1/2 cup oatmeal
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/2 cup dried cherries or cranberries or blueberries
  • 1/4 cup lightly toasted nuts of choice
  • 2 oz dark chocolate in chunks or chips
  • cooking spray


Preheat oven to 375 ° F.

Combine margarine, oil and brown sugar in the bowl of a stand mixer and mix on high speed until mixture is light and fluffy, for about 2 minutes. Add applesauce, egg white and vanilla. Mix to combine. Add flour, oatmeal, salt and cinnamon; mix until combined. Add fruit, nuts and dark chocolate. Mix to combine.

Spray a baking sheet with cooking spray. Using 1 tablespoon of cookie dough at a time, roll into balls and place 2 inches apart on sheet. Press down to flatten slightly. Bake for 12-14 minutes or until lightly brown but still soft. Remove from oven and cool on racks.
