- 6-8 medium beets
- olive oil
1. Thinly slice the beets with a mandoline or sharp knife.
2. Arrange beet slices on a cookie sheet and drizzle with olive oil.
3. Bake for 20 minutes at 350°F.
4. Sprinkle with salt and enjoy.
