This eggless reduced-fat version of mayonnaise is high in protein and vitamins. Try this on a sandwich for the full flavor of some of your favorite spreads without all of the unhealthy ingredients. Â Â
1/3 cup raw almonds 2/3 cup cooked gigante beans (or other white beans) 2 cloves garlic, chopped juice of 1 lemon pinch of salt 1/4 cup olive oil broth or water (to thin to desired consistency)
Process almonds, beans, garlic, lemon juice, salt and olive oil until smooth.
Add water or broth to achieve desired consistency.
Makes 1 cup.
