Valentine's Day Creamy Salmon Pasta

Going out for a nice Valentine's Day dinner may be difficult this year, so bring the romance home! This creamy salmon pasta is the perfect dinner recipe for a lovely night in with your loved one.

1 pound Rigatoni or ziti
2 tablespoons Olive oil
2 Shallots, minced
2 Garlic cloves, minced
1 tablespoon Flour
1 1/2 cups Milk
1 cup Peas
8-10 ounces Cooked salmon
Cracked black pepper
Kosher salt

Cook the pasta in salted water 2 minutes less than the package instructions. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

Heat a large skillet over medium-high heat and add in the olive oil. When hot, add in the shallots and garlic and season with salt and pepper. Cook until translucent, about 3 minutes.

Add in the flour and the milk and simmer until the mixture thickens, about 5 minutes over medium-low heat. Stir in the salmon and peas and add in some cracked black pepper. Taste for seasoning.

Stir in the pasta. Add in a little of the reserved pasta water if needed to loosen the sauce and toss to coat. Divide between plates and serve.
