1 Everything bagel, halved and torn into bite-size pieces 3 tablespoons Yogurt 1 tablespoon Red wine vinegar or lemon juice 1/2 teaspoon Honey 1 Zest of lemon Kosher salt, to taste Black pepper, to taste 3 tablespoons Olive oil 1/2 Red onion, thinly sliced 1/2 cup Cherry tomatoes, halved 1/4 cup Sliced cucumbers 1 Head of butter or red leaf lettuce, washed and dried and torn into pieces 1/2 Package of smoked salmon 2 tablespoons Capers, roughly chopped 2 tablespoons Chopped dill
Preheat the oven to 350 degrees F.
Place the torn pieces of bagel onto a baking sheet and bake in the oven until the edges become golden brown and crunchy. Remove from the oven and let cool completely.
To make the vinaigrette, place the yogurt, vinegar or lemon juice, honey, capers, dill, lemon zest, and salt and pepper into a large mixing bowl. Wisk to combine and then slowly drizzle in the olive oil. Taste for seasoning. Add in the red onions, cherry tomatoes, cucumbers, and lettuce and toss to coat. Place the salad into a serving dish and top with the smoked salmon and the bagel croutons.
