Eggplant Bacon

Made from eggplant, this "fakon" (aka fake bacon) is a bacon substitute guaranteed to be your latest obsession. Crunchy and coated in flavorful spices, it's a recipe even the skeptics can get on board with.

1 eggplant
2 tbsp olive oil
2 tbsp soy sauce
1 tsp maple syrup
1 tsp smoked paprika
kosher salt, to taste

1. Preheat oven to 300°F.


2. Line two baking sheets with parchment paper.


3. Cut 1 eggplant in quarters, lengthwise. Slice each quarter into long, very thin strips.


4. In a small bowl, whisk together 2 tablespoons olive oil, 2 tablespoons soy sauce, 1 teaspoon maple syrup, 1 teaspoon smoked paprika.


5. Place eggplant slices onto baking sheets and brush both sides with sauce. Season with pepper.


6. Bake until eggplant is cooked through and beginning to get crisp, 45-50 minutes. Season with salt when the eggplant comes out of the oven.
