1 1/2 stick of butter (room temperature) 2 tbsp cinnamon 3/4 cup brown sugar 2 tbsp brown sugar 1 tbsp vanilla extract 3 eggs 1 cup unsweetened applesauce 1 cup apple cider 2 cups AP flour 1 cup whole wheat flour 2 tsp baking powder 1 tsp baking soda 1/2 tsp nutmeg 1 tsp salt 1 apple
Preheat the oven to 350 degrees F
Grease a 10-inch bundt pan with ½ tablespoon butter.
In a small bowl combine 2 tablespoons brown sugar and 1 tablespoon cinnamon and sprinkle into the bundt and shaking so that the entire pan is coated.
Place the remaining butter into a large bowl. Using a stand mixer or hand mixer cream the butter and the remaining sugar together until light and fluffy, about five minutes.
Add the vanilla and the eggs, one at a time, and then pour in the applesauce and apple cider and combine.
In a separate bowl, combine the flours, baking powder and soda, nutmeg, salt, and remaining cinnamon. Stir in the dry ingredients in two batches.
Fold in the apples and pour into the prepared bundt pan.
Bake for 50 to 60 minutes until a skewer or paring knife comes out clean when inserted.
Remove from the oven and let cool. Release the edges with a knife or spatula and invert onto a plate or cake stand. Serve with whipped cream or yogurt or eat on its own.
